Two years ago, I made the leap from hobby to profession when I turned KitchenSidecar, a food blog dedicated to the lore of regional cuisine, into a food business by selling pork belly banh mis at the SF Underground Market.
What followed was a series of lessons in paradigm shifts, business, and ultimately courage that led me to launch Rice Paper Scissors, a Vietnamese Pop-Up Cafe with Valerie Luu. Inspired by sitting on little red stools while downing bowls of pho in Saigon, we created a monthly underground Vietnamese restaurant in its likeness. For those looking for their regular fix, we also sell banh mi out of Mojo Cafe every Thursday.
