The Soulrrito is an inspired combination of salsa-infused macaroni and cheese, tri tip beef, collard greens, and yams in a flour tortilla. And it’ll be gone before you know it.

You may want to make a reminder for yourself tomorrow (Saturday, May 24): that’s when the Soulrrito will be sold for one day only at the 24th Street location of Papalote Mexican Grill. The limited item is a collaboration between owner Miguel Escobedo (aka DJ Mr. E) and Pam the Funkstress, DJ for The Coup, afternoon mixer on KBLX, and owner of Piccadilly Catering and Restaurant in Foster City.

“I love doing fusion with meaning,” says Escobedo, who is also known to make a mean Mexican-Filipino burrito. “I bumped into Pam at Restaurant Depot and after talking about her delicious Southern cuisine I realized that the formula for a delicious burrito — a starch, a protein, and a green or vegetable — was right there! We had a taste test day and we realized what a winner we had on our hands.”

The Soulrrito will be available from 11 a.m. until they sell out and are priced at $11.25; Escobedo is also making a vegetarian version with Soyrizo for $9.10.
